Two of the four hops in Establishment's newest IPA never arrive as cones at all. Cyboogie is hopped with Nelson Sauvin, Nectaron, Mosaic Cryo and a Columbus product called Cryo Dank Dive - the last two being concentrated lupulin rather than whole hops, processed into a powder that carries the resin and oil while leaving most of the leafy plant matter behind.
That matters in a beer like this. Concentrated hop products let a brewer push aroma and flavour hard without dragging in the vegetal bite that comes from dosing whole hops at the same intensity. In a West Coast IPA, where the beer is clear and there is no haze or residual sweetness to hide behind, that distinction shows up in the glass.
The two whole-cone varieties are both New Zealand names with strong reputations. Nelson Sauvin is known for a white wine character, frequently compared to sauvignon blanc, and Nectaron is a newer variety with a tropical and stone fruit profile that has gained ground quickly with hop-forward brewers. Running them alongside Mosaic and Columbus concentrates gives the beer a foot in two hop-growing hemispheres.
The Establishment Brewing Company frames all of this in cyberpunk shorthand. The hop combination, it says, might look like a cyborg on the print out, but it executes like a bouncy ball of electric lettuce, powered by a cast of berries, citrus and candied stone fruit. The listed notes are boysenberry soda, tangelo flesh and OG Kush. The brewery calls it forward-thinking and dank.
Cyboogie is a West Coast IPA at 6.8 percent. It lands as a taproom exclusive from Friday, October 2 through Monday, October 5, with the province-wide and online release to follow after the weekend.
