The season's first imperial stout at The Establishment Brewing Company did not come out of a single barrel program. Speak Through Shadows is blended from stouts aged in bourbon casks sourced from three separate Kentucky producers: the Willett Family Estate, 1792, and Buffalo Trace. The brewery layered mountains of house-toasted macadamia nuts and coconut on top of that blend.
Pulling from three distilleries rather than one is the detail worth sitting with. Bourbon barrels are not interchangeable. Char level varies, as does how long the whiskey sat and how deeply it worked into the wood, so a blend across three sources smooths out whatever any single set of barrels would have pushed too far. The result is meant to read as the brewery's beer rather than as somebody else's whiskey.
Toasting the nuts in house is a deliberate step too. Browning is what produces caramelized, nutty depth, and raw macadamia arrives with very little of it.
Establishment lists the tasting notes as coconut macaroons, Maltesers, and Subway cookies. It says the coconut and macadamia deepen into caramel, bourbon, coffee, dark fruit, and oak. Its own shorthand for the beer is an opulent Bounty bar reborn in the abyss, which at least tells you which direction the sweetness runs.
Darkness descends. Accept its warm embrace.
That is the brewery's closing line from the newsletter, which went out under the subject line "Darkness Descends."
At 15.3 percent, the beer sits well above where imperial stouts usually land, which is more often somewhere between 8 and 12. It comes in 355 mL cans carrying the Extra Strong Beer designation on the label. Establishment says it is meant to be sipped slowly and shared, and at that strength the advice reads less like marketing than like instruction.
The timing is early. Big barrel-aged dark beers generally turn up with the late-autumn and winter calendar, not in the middle of September, so a mid-month release puts this one out ahead of the usual run.
