The Establishment Brewing Company has released Something You Can't See, a 6.4 percent hazy IPA built on Peacharine, Simcoe, and Mosaic Cryo hops. It is the Calgary brewery's latest turn on the hazy format, this time leaning into peach rather than the more common citrus-and-pine combination.
The brewery describes the beer as tasting like sun-ripened BC peaches and cream, rounded out by a bright citrus tang, a tropical sweetness on the edges, and a subtle hint of ganja that keeps it drinkable.
Thinking about the hops and flavor profile
Peacharine is a relatively new hop variety, purpose-bred for stone fruit character, and it's doing the heavy lifting here rather than acting as an accent alongside a more standard tropical hop bill. Pairing it with Simcoe, which brings some resin and dank depth, and Mosaic Cryo, which adds concentrated berry and citrus, gives the beer a base that keeps the peach note from turning one-dimensionally sweet. The result reads fuller than a typical hazy IPA description, closer to a milkshake IPA in its creaminess without the lactose-heavy label that style usually carries.
