Pink guava is back in Guggman Haus Brewing Co.'s Into the Wild Sour series, this time paired with orange rather than the papaya it ran with in July. The new entry is a 7.8% sour that the brewery describes as balancing lively tartness against sweet citrus and creamy vanilla.

The mechanics of the series are unchanged. Souring comes from a wild yeast strain rather than a controlled culture, and milk sugars and oats are added to fill out the body. Guggman Haus has been running this format long enough that the fruit pairing is where most of the variation now happens.

Orange is a sharper partner than papaya. Guava is lush and faintly perfumed. Orange supplies the acidity that another soft tropical fruit would not, giving the tartness a clearer edge to work against. The vanilla is the same softening agent the series has leaned on throughout.

Into the Wild Sour: Pink Guava Orange is one of four new beers at Guggman Haus this week. At 7.8% ABV it is the strongest of the group.
