Haus Blend Uses Lactose to Take Its Coffee With Cream and Sugar

Haus Blend is back at Guggman Haus. It is a 6.2% milk stout infused with coffee from Indianapolis roaster Tinker Coffee Co. and rounded out with the milk sugar that gives the style its name.

Haus Blend is back at Guggman Haus Brewing Co., and the coffee in it has not traveled far. The 6.2% milk stout is infused with Tinker Coffee Co., a specialty roaster based in the same city as the brewery. That makes this one of the more local collaborations Indianapolis drinkers will run into this month.

Guggman Haus describes layered notes of freshly roasted coffee beans, milk chocolate, and subtle cocoa sweetness, balanced with milk sugar into a finish it calls rich, smooth, and creamy. The milk sugar is the part worth understanding. Lactose does not ferment out the way other sugars do, so it stays in the finished beer as sweetness and body. In a coffee stout that is not a neutral decision: it puts the beer in roughly the same place as coffee taken with cream and sugar, softening roast bitterness rather than leaning into it.

The brewery is well positioned to think about that particular balance. Its Gent Avenue location runs a full coffee program alongside the beer, currently pouring a Summer's End menu of honey and vanilla lattes and cold brew. That makes a house coffee stout a fairly natural thing to keep in rotation.

Haus Blend Coffee Milk Stout is one of four new releases at Guggman Haus this week, alongside two entries in the brewery's IPA Expedition trial series and a new tropical sour.
