The name came from the soundtrack, and Adroit Theory Brewing Company is not being coy about where it found it. The brewery credits the Lizzo song from the Barbie movie directly, and adds that the film is now on its second viewing.
The beer underneath the name is a variation on something the brewery already makes. Its starting point is Life in Pink, an existing Strawberries and Cream sour. For this release, pineapple and coconut were added on top of that base, which Adroit Theory says lands somewhere around a poolside in Miami.
Strip the branding away and the build is a familiar one rearranged. Pineapple and coconut are the two halves of a pina colada, and dropping them onto a strawberry and cream base is essentially a strawberry colada - which is exactly what the brewery has called it on the label.
Coconut is the ingredient doing the least obvious work. It contributes fat as much as flavor, and fat coats the palate and carries aromatics that would otherwise blow off quickly. In a fruited sour it tends to round the acidity down and add a slickness that keeps a tart beer from finishing thin. Against strawberry and pineapple, both of which bring their own sharpness, that softening is the point.
The beer runs 4.5 percent.
