Adroit Theory Brewing Company released Dawn of A Dark Day XII: RESIST [Metal Label Edition] at its Purcellville taproom this afternoon. The brewery is clear about what it is: a variant of RESIST, the Hazy Triple IPA already in its lineup, rather than a new recipe. Two things change. The dry-hop rate is doubled from the standard version, and the can gets a label designed to look like metal.
The hop decision is the one that shows up in the glass. Dry hopping happens after fermentation, when the beer is no longer hot enough to pull bitterness out of the hop. The charge therefore contributes aroma and flavor almost exclusively. Doubling it does not make a beer harsher; it makes it louder. A 10 percent triple IPA carries a substantial hop load before anyone doubles anything, so the absolute quantity involved here is not small.
Adroit Theory is framing the release as a celebration of its COBRA series, the 12-part run of beers built around G.I. Joe and its arch-nemesis organization. That series came back this month after a three-year hiatus with REBEL, its fourth entry. The brewery has the fifth listed among its September pre-orders, built around the character Snake Eyes.
RESIST [Metal Label Edition] is pouring now and available in cans at the taproom, with 10 cases packaged.
