Hop-Fu! Stacks Nine Hops and Keeps Medaling at World Beer Cup

North Park's flagship DDH West Coast IPA has now medaled at three straight World Beer Cups, and it's back in the rotation this week riding a nine-hop bill that somehow still finishes with definition instead of mud.

Hop-Fu! is North Park Beer Co.'s flagship, and this week it's back in the rotation alongside three newer releases in the San Diego brewery's latest can and draft drop. The double dry-hopped West Coast IPA has now picked up a World Beer Cup gold in 2022 and silver medals in both 2024 and 2026.

The hop bill runs nine deep - Chinook, Simcoe, Citra, Citra Cryo, Citra DynaBoost, Amarillo, Mosaic Cryo, Mosaic, and Columbus Cryo - and North Park describes the result as pine and dank resin up front, with grapefruit, lemon zest, and stone fruit trailing into a citrusy, slightly floral finish.

Thinking about the hops and flavor profile

Stacking nine hops in one beer usually works against clarity - more varieties competing for the same aroma space tends to average everything out into a generic "hoppy" impression rather than distinct notes. Hop-Fu! avoids that by leaning on repetition rather than variety for its own sake: three separate Citra products and two Mosaic products form the backbone, with Chinook, Simcoe, Amarillo, and Columbus Cryo layered in around them. That's less a scattershot of nine different flavors and more a small number of core hop characters reinforced through different processing forms, which likely explains why the finish holds a clear pine-to-citrus-to-stone-fruit progression instead of collapsing into mud. At 7.5 percent ABV, the beer also has enough malt backbone to carry that much hop material without losing shape.

Hop-Fu! is available now in cans and on draft at North Park's taprooms, with pickup and California shipping options through the brewery's site.
