The latest release from Green Cheek Beer Company's Rage Cave sour program, part of its ongoing Puncheon Project barrel series, takes its time getting to the glass. The barrel fermented mixed culture sour beer starts in large French oak barrels, where the brewery's house yeast and bacteria culture do their work before passionfruit and guava are added for a second fermentation. From there the beer is keg conditioned, letting a third fermentation carbonate it naturally over roughly six months.
Green Cheek describes the result as its favorite from the program so far, with notes of dried apricot and leather alongside the added guava and passionfruit, and a soft tannin profile balancing the acidity. At 5.0 percent ABV, the long process is aimed at depth rather than strength.
Thinking about the hops and flavor profile
Three separate fermentations in one beer is unusual, and each stage is doing distinct work rather than just adding time for its own sake. The mixed culture in the French oak barrel builds the base sourness and the barrel's own tannin and oak character over the first stretch. Adding the passionfruit and guava for a second fermentation lets the fruit's own sugars ferment out rather than sitting on top as syrup, which is likely part of why the brewery can describe the beer as "wonderfully dry" instead of sweet. The final keg conditioning is a slower, more old-world way to carbonate a beer than force-carbonating it, and it's the kind of process choice that shows up as texture more than as a flavor you can name outright.
