Quality of Consciousness Takes Fresh Mosaic the Hazy Route
Four of Fort George's fresh hop beers take the clear, bitter, West Coast route. This one, made with Portland's Ruse Brewing and fresh Mosaic, is the soft one - and the brewery calls it curious and considered.

Quality of Consciousness is a hazy IPA at 7 percent, brewed with fresh Mosaic hops, and made in collaboration with Ruse Brewing of Portland. Fort George describes it as "a curious and considered Fresh Hop Hazy IPA."
The choice of format is the interesting part. Fresh hop beers lean overwhelmingly toward clear, bitter, West Coast constructions, where nothing is in the way of the aroma and the bitterness gives it a hard edge to sit on. A hazy does something different with the same raw material. The suspended protein and yeast that make it cloudy also round off the body and blunt the bitterness, so hop character arrives as smell and soft fruit rather than as a sharp edge.
Mosaic suits being handled that way. It is a high-oil variety that reads as blueberry, mango and stone fruit more than as pine, and it has become a hazy IPA staple precisely because its fruit character survives a low-bitterness setting. Used fresh, that profile typically picks up a greener, more herbal note alongside it.
It would be an easy one to pour next to something salty and fried, where the softer bitterness stays out of the way.
