Mirrored Realities Runs Fresh Strata Through the Hopback

Five hundred pounds of fresh Strata went from a Coleman Farms field into the hopback and onto the hot side. Mirrored Realities is the beer Fort George uses to try things, which makes it the right place for them.

Wet hops start losing the thing that makes them worth using almost as soon as they come off the bine. Roughly four-fifths water and never kilned, they have hours rather than days. Everything about a fresh hop beer is arranged around that clock.

Fort George's answer this year is to shorten the trip. Fresh Hop Mirrored Realities is a West Coast IPA at 7 percent, and the brewery says 500 pounds of fresh Strata hops went from Coleman Farms to the hopback to the hot side of the brew, in that order and without much of a pause.

The hopback is the part worth stopping on. It is a sealed vessel packed with whole cones, sitting between the kettle and the cooling stage, and hot wort is drawn through the bed of hops on its way past. The hops are never boiled. They are steeped in passing, at high temperature but only briefly, so the aromatic oils get carried into the wort instead of being driven off into the brewhouse air. For a hop whose entire appeal is volatile, it is close to the last chance to catch it.

Strata is a fitting variety to spend that chance on. It was bred in Oregon and released relatively recently, and it has become a Pacific Northwest signature for a reason - a mix of passionfruit and strawberry against a dank, resinous base that few other single hops manage on their own. Used fresh, the greener and more herbal end of that range tends to come forward.

Mirrored Realities is a recurring Fort George slot rather than a one-off, and the brewery is explicit about what it is for:

Brewing beer is a science. But when you're working with new ingredients, it's also an art, and you have to test your colors before you put them on the canvas.

That framing explains the choice of vehicle. A brewery testing an unfamiliar handling method wants a beer whose premise is already provisional, and Mirrored Realities exists to be a version of itself that might not return.
