While Toro gets to be the loud new arrival at Willibald Farm, Cosmic is the reliable one that just came back around, like a satellite completing another lap. This West Coast IPA is billed as a seasonal return, and at 6% ABV it sits comfortably in the range of "you can have more than one and still remember the drive home."
The hop bill reads like a greatest hits list: Chinook, Centennial, Cascade, and Simcoe, the four hops that basically invented the West Coast IPA category before it had a name. There's nothing experimental going on here, and that's rather the point. Cosmic isn't trying to reinvent anything, it's trying to remind you why this style became a classic in the first place.
Willibald Farm, working out of Ayr, Ontario, has built its identity on doing things the proper way on their own land, and a beer like Cosmic benefits from that consistency. Seasonal returns only work if the beer tastes the same good way you remembered it, and a farm that controls its own process from grain to can is well positioned to pull that off.
Cosmic was canned alongside Toro on July 2nd, and Willibald is upfront that it's available while supplies last, so this isn't a beer with an infinite shelf life. It's making the rounds through the farm retail shop, the St. Jacobs and Kitchener markets, and provincial delivery, the same distribution web catching Toro.
If Toro is the beer you tell your friends about, Cosmic is the one you quietly keep restocking. Sometimes the return of an old favorite is exactly the release worth paying attention to.
