The Cleveland brewery's release runs at 5.3 percent ABV and is built on German malts and hops, which the brewery credits with a subtle roast character. It is out now for preorder and pickup.
Dark, but not heavy
Schwarzbier is one of the older German lager styles and one of the most consistently misread. The colour comes from a small proportion of dark, heavily roasted malt, and it is genuinely close to black in the glass. What it is not is a stout. The roast is dialled down to something closer to a suggestion of coffee or cocoa than a statement, the body stays light, and the hopping is restrained in the German manner rather than assertive.
The result is a beer that reads as substantial and drinks as a lager. That is the tension Masthead is pointing at with its whetstone line, and it is the reason the style keeps its following: it looks like a winter beer and finishes with the clean, dry snap of something far paler.
The German malt and hop bill matters here more than it would elsewhere. In a style this restrained, there is nowhere for a rough edge to hide. Noble hopping and continental malt are the traditional route to the particular smoothness the brewery is describing, and a lager fermentation and extended cold conditioning are what clean the beer up on the way out.
At 5.3 percent it sits at the everyday end of the range, which is where schwarzbier has always been most at home. A beer with roast character and no weight behind it is a useful thing to have in a fridge in late September, and it would sit comfortably alongside anything smoked or grilled without taking the plate over.
