Pumpkinator with Cocoa Nibs Adds Chocolate in Its Unsweetened Form

The bourbon barrel Pumpkinator with what Saint Arnold openly calls an over-the-top amount of chocolate. Cocoa nibs carry no sugar, so what they add is aroma and bitterness rather than sweetness.

Of the three Pumpkinators reaching Texas shelves on September 21, this is the one Saint Arnold has loaded most heavily. It takes the bourbon barrel version as its starting point, matches it at 12.8 percent in a 12 ounce bottle, and then adds cocoa nibs on top. The brewery's description does not hedge: an over-the-top amount of chocolate.

The word "chocolate" is doing something specific here, and it is worth separating from the bar in a checkout aisle. A cocoa nib is simply a roasted cacao bean cracked into pieces. No sugar has been added, no milk, none of the long grinding and conching that turns cacao into confectionery. Brewers typically add nibs late, often in the barrel or in secondary, and what the nibs contribute is cocoa aroma and a dry, unsweetened bitterness rather than anything resembling sweetness.

That distinction changes how the beer reads on paper. An over-the-top amount of chocolate does not mean an over-the-top amount of sugar. The sweetness in this beer is coming from elsewhere: the molasses and brown sugar Saint Arnold builds the base Pumpkinator on, plus whatever the bourbon barrel has left behind. The nibs are arriving on the other side of the ledger, as a counterweight to all of it.

Cocoa against pumpkin pie spice is the less-traveled pairing of the two. Chocolate more often gets put next to coffee, vanilla or a straightforward roast. Cinnamon, nutmeg and clove are a different set of neighbors, though not an unnatural one. Spiced chocolate drinks predate chocolate bars by centuries, which gives this particular stack of ingredients a longer history than a novelty release usually gets to claim.

For anyone looking to put it next to something, this reads like a beer for the dense and not-too-sweet end of a dessert table: a flourless chocolate cake, or a pecan pie with the sugar dialed back.

Pumpkinator Aged in Bourbon Barrels with Cocoa Nibs is packaged in 12 ounce bottles and reaches stores on Monday, September 21. It also pours on draft at Pumpkinator Day at the brewery's Beer Garden and Restaurant in Houston, included in a flight with the 2026 original, the bourbon barrel version, and 2025 and 2013 vintages. Preorders for pickup are open for September 21 only, between 11 a.m. and 9 p.m. Saint Arnold notes that quantities on some of this year's releases are very limited, with bottle limits applying, and that anything left after the presale goes on sale at the Beer Garden and Restaurant from September 22.
