Ill Will Brewing (Craft Beer & Brewery in Columbiana OH)

Ill Will Brewing in Columbiana, Ohio is the kind of place that treats beer like a rebellious work of art rather than a polite social nicety. Their catalogue reads like a mad scientist’s notebook: intricate hop blends that dance on the palate, daring experiments with unconventional ingredients, and tropical hazy ales that transport you straight to a sun‑splashed island without the jet‑lag. Barrel‑aged specials sit on the shelf like secret weapons, each sip telling a story of patience and precision.

If you thought craft beer couldn’t get any more adventurous, meet their smoothie beers—flavors so creative they could give a fruit stand a complex inferiority complex. Adjacent BBQ stalls (because nothing pairs better with a good stout than smoked ribs) enhance the experience, while the stout itself consistently earns top‑tier ratings, proving that flamboyance doesn’t preclude excellence. The staff are both friendly and knowledgeable, ready to guide you through the menu without sounding like they’ve just read a brochure. Despite its modest size, the venue feels unexpectedly cozy, inviting you to linger long enough to appreciate the craftsmanship without feeling cramped.
