Since 2015 Locust Cider has been proving that hard cider can be as adventurous as a Sunday afternoon in the Rockies. Operating out of Washington with taprooms in both Washington and Fort Collins, Colorado, the company shuns artificial gimmicks in favour of real fruit, bold pairings and a relentless curiosity. The most audacious examples – smoked blueberry and vanilla‑bean – sit comfortably next to a crisp, traditional dry that could satisfy a purist. A portion of every pint goes to the Hydrocephalus Association, a cause close to owner Jason Spears’ heart (who insists that a good cider should also do some good).
