Trinity Swaps the Cajun Holy Trinity for Three Hops

Onion, celery and bell pepper start every Louisiana roux. Parish and Other Half borrowed the structure and not the vegetables, building an 8% Double IPA on Dolcita, Nectaron and Citra instead.

Ask a cook in south Louisiana where a dish begins and the answer is three vegetables. Onion, celery, bell pepper - the holy trinity, the base of gumbo, jambalaya and etouffee. Parish Brewing Co. has taken that structure, kept the count, and thrown out the produce.

Trinity is an 8% Double IPA built with Other Half Brewing, the Brooklyn brewery Parish has collaborated with before. The brewery's framing is straightforward: asked what its own holy trinity would look like, it answered with hops instead of vegetables. Parish is also clear that no onions went anywhere near the beer, which is the kind of thing worth stating plainly when the can is covered in them.

The three hops are Dolcita, Nectaron and Citra. Parish says each brings something distinct and describes the result as bright tropical fruit, juicy citrus, ripe stone fruit and vibrant aromatics, layered into something the brewery calls bold, expressive and unmistakably fresh.

The lineup is worth a second look, because these are not three interchangeable tropical hops. Citra is the established anchor, the variety that defined what an American hazy smells like. Nectaron is the New Zealand aroma hop that pushes pineapple and passion fruit, and Parish leaned on it heavily in Vermillionaire II last month. Dolcita is the newcomer by a wide margin: a Hop Breeding Company variety from a 2016 cross that only reached commercial release in 2025, known for honeydew, peach and a sweeter stone-fruit character. Three hops covering three different corners of the same fruit bowl is a defensible reading of the trinity idea.

Presale opens Wednesday, September 23 at noon CDT through the brewery's online shop, with no purchase limit. Release day is Friday, September 25 at 11 a.m. in the Broussard taproom, sold first-come, first-served, with taproom pickup also available through Oznr. Cans are $20 for a 4-pack of 16-ounce cans. UPS direct shipping starts the following week for consumers in Washington D.C., Kentucky, Nebraska, New Hampshire, North Dakota, Ohio, Oregon, Vermont and Virginia. Trinity also goes into the October Parish Beer Club box.
