You know that feeling when something needs way more patience than you expected, and it turns out the wait was the whole point? That's Provinciale.
This one sat conditioning on Brettanomyces D for several months before Strange Fellows called it done, a rustic saison built on pilsner malt, wheat, and rye, at 6.0% ABV. What comes out the other side is dry, a little wild, and genuinely spicy: earthy funk and ripe tropical fruit up front, balanced by bright spice and a firm, crisp finish. Citra and Nelson Sauvin hops add citrus and pineapple on top of all that barnyard character, with a bit of rye spice and lively carbonation keeping it from getting too serious about itself.
